Grapes 100% Glera DOCG grapes
From our best vineyards of Glera grapes located in the Asolane hills (Sant’Anna locality), this sparkling wine is obtained which has as its main feature an extreme dryness also given by the type of soil from which it is born called “caranto” for its hardness and its compactness. The stumps for each hectare are 3000, the grapes are grown with the Cappuccina system, is then selected and collected in crates during the harvest. The vinification is white with a soft pressing and after a static decantation at low temperature the must is added with selected yeasts. The fermentation lasts about 15 days and then the wine is kept in thermo-controlled stainless steel tanks at 5 ° C until the second fermentation.
