From our red grape varieties (Virginia) our rosé brut sparkling wine is obtained. There are 4500 vines per hectare, the soil tends to clay and the grapes are grown with the Guyot-Sylvoz system. The vilification is in white with a delicate pressing in order to obtain a rosé and fruity wine. After a static decantation of 20 hours, the must is added with selected yeasts. Fermentation lasts about 15 days and then the wine is kept in thermo-controlled stainless steel tanks at 5°C until the second fermentation.
